Massaman beef curry

Diet: omnivore

Summary

Massaman curry paste and curry typically combine dried chili, coriander, cumin, lemongrass, galangal, garlic, shallot with warm “baking” spices such as cinnamon, cardamom, cloves and often nutmeg/mace echoes—then simmered with coconut milk and beef or chicken. It is a textbook multi-spice single-pot dish.

Combined-spice themes

  • Fresh aromatics: lemongrass, galangal, garlic, shallot
  • Dry spices: coriander, cumin, turmeric (paste-dependent), chili
  • Warm spices: cinnamon, cardamom, clove
  • Often finished with fish sauce / tamarind for sour–sweet balance
